CREAMY GARLIC ASPARAGUS

Category: Asparagus

1 lb fresh saparagus, trimmed of tough ends
4 oz sour cream
1 tbsp milk or cream
2 tsp white wine vinegar and olive oil
3 clove garlic, minced
Pepper, to taste

Steam asparagus until crisp-tender, about 6 minutes. Plung into ice water to stop cooking process. Drain and chill until ready to serve. Mix dressing by combining remaining ingredients. To serve, spoon sour cream mixture over asparagus spears. Serves 4 as a side dish or 8 as an appetizer.
