EGGS A LA SPINACH SOUFFLE

1 (12 oz) box spinach souffle
4 English muffins, split and toasted
8 poached eggs
8 pieces precooked bacon

Cook spinach souffle in microwave according to directions on box.

With the toasted English muffin as the base, add 2 tbsp of spinach souffle to each muffin half. Top with poached egg. Serve with heated bacon. Serves 4
