OVEN BBQ BRISKET

1 beef brisket, trimmed
1 bottle favorite bbq sauce
1 (6 oz) can pineapple juice
3 tbsp yellow mushart and minced garlic
4 cups chicken stock
1 cup vegetable oil

Mix bbq sauce and next 3 ingredients in a shallow pan. Add brisket and turn to coat well. Cover with foil and marinate in refrigerator overnight.

In a Dutch oven, heat oin on medium-high on stove top. Remove brisket from marinade and blacked it on both sides, being extra careful with hot oil and cold bbq sauce. Remove from heat and let cool for a few minutes. Pour remaining marinade over brisket and cook about 2 hours or until brisket is tender. Allow to rest, covered, at least 20 minutes before slicing across the grain.
