GRILLED SIRLOIN WITH RED ONIONS AND BLUE CHESE BUTTER

Blue Cheese Butter
4 oz (about 3/4 cup) creamy blue cheese, at room temperature
3 tbsp unsalted butter, softened
3 tbsp chopped chives, plus 1 tbsp for garnish

Steaks and Onions
2 tbsp dried thyme leaves
1 1/2 tsp kosher salt and coarsely ground black pepper
3 (1 inch thick) boneless sirloin steaks, about 1 1/2 lbs, trimmed of excess fat
3 large red onions, peeled and cut into wedges
3-4 tbsp olive oil for brushing onions and extra for greasing the grill rack
4-6 skewers

Butter: Break blue cheese small pieces in a small bowl and add butter and chives. Blend ingredients together. Cover with plastic wrap and refrigerate. Bring to room temperature 30 minutes before serving. (Can be prepared up to 1 day in advance.)

Steaks and Onions: Mix together seasonings and rub half of the mixture on both sides of the steaks. Divide onion wedges onto skewers and brush with olive oil. Sprinkle with remaining seasoning.

Preheat grill to high heat. Grill onion skewers, turning often, until charred around the edges and tender, about 20 inutes. When done, remove from grill and cover loosely with foil. After onions have been grilling for 10 minutes, add steaks and grill 4-5 minutes on each side. Let meat rest a few minuts and then halve each steak and arrange on serving platter and surround with onions. Top each steak with generous dollop of butter and sprinkle with green onions.
