SPRING SALAD

3 cups washed baby spinach leaves, dried in paper towels
3 cups washed and torn salad greens, dried in paper towels
1 cup sliced strawberries
2 kiwi fruit, peeled and sliced
1/4 cup sliced almonds
1/4 cup sliced mushrooms
1/4 cup snow pea pods
1/4 cup mandarin orange slices
1 medium red onion, thinly sliced

Dressing
1/4 cup orange juice
2 tbsp honey
1 tsp Dijon mustard
1/2 tsp poppy seeds
Salt and pepper, to taste
2 tbsp olive oil

Tos together salad ingredients in a bowl. Whisk together dressing ingredients and slowly drizzle in the olive oil, whisking constantly until dressing is mixed. Toss the dressing with the salad or serve on the side. Serves 6
