HAWAIIAN PORK CHOPS

4 pork loin or rib chops, 3/4 inch thick
2 tbsp cooking oil
1/2 of an 8 oz can sliced water chestnuts, drained
1/2 of an 8 oz can bamboo shoots, drained
1 cup sliced mushrooms
1 (9 oz) jar sweet and sour sauce
1 (8 oz) can pineapple chunks, drained
Hot cooked rice

In a large skillet, cook chops in oil for about 5 minutes or until brown on both sides. Remove from skillet. Add next 3 ingredients and cook 2-3 minutes or until browned, stirring occasionally. Stir in sauce and pineapple. Return chops to skillet. Bring to a boil and reduce heat. Simmer over medium heat for 20-30 minutes or until pork is done. Serve with rice. Serves 4
