VIENNESE BEEF GOULASH

4 lbs onions, sliced or diced
4 oz oil
2 oz white vinegar
4 tbsp Hungarian paprika
1 tsp marjoram, confectioners
1 tsp caraway seeds, confectioners
Bay leaf
1 tbsp lemon zest, grated
Salt, to taste
5 lbs beef chuck, cubed

Saute onions in oil in a heavy pot, browning the onions well. Add vinegar, deglazing lightly. Add remaining ingredients, except meat, blending well. Add meat. Cover and simmer slowly until meat is tender, adding water or stock if liquid decreases. Serve with spaetzle or noodles.
