GIANT PEANUT BUTTER CUP COOKIES

1/2 cup butter, softened
3/4 cup sugar
1/3 cup creamy or crunchy peanut butter
1 egg
1/2 tsp vanilla extract
1 1/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
16 miniature peanut butter cups, cut into 4ths

Preheat oven to 350. Cream together first 3 ingredients. Add egg and vanilla extract. Stir together dry ingredients and add to creamed mixture; blend well. Drop dough by level 1/4 cup measurements onto ungreased cookie sheets, 3 cookies per sheet. Push about 7 pieces of peanut butter cup into each cookie, flattening cookie slightly. Bake 15 to 17 minutes or until light golden brown around edges. Center will be pale and slightly soft. Cool 1 minute on cookie sheet and then remove to wire rack to cool.
