MEXICAN CHICKEN SKILLET - Easy

1 cup sour cream
1 can cream of chicken soup
1 onion, chopped
2 1/2 cups cooked chicken, diced
2 (6 oz) pkg cornbread mix
Milk
1 cup grated cheddar cheese
2 cups tortilla chips, slightly broken
1 cup Pepper Jack cheese

Preheat oven to 400. Grease a large casserole dish. Combine first 4 ingredients. Make cornbread batter with milk following pkg instructions. Add cheese to batter. Cover bottom of casserole with broke chips. Sprinkle with cheese. Spread chicken mixture on top and carefully spread cornbread batter over chicken layer. Bake for 25-30 minutes or until golden. Serves 6-8
