SWISS POTATO TORTE

Category: Au Gratin and Scalloped

4 large baking potatoes
1/4 cup parsley, chopped
1 large clove garlic, crushed
1/2 ts dried thyme leaves
1/4 tsp pepper
1 1/2 cups Swiss cheese, grated
1 cup chicken broth

Preheat oven to 400. Spray 1 1/2 quart baking dish with cooking spray. Pare and thinly slice potatoes. In bowl, toss potatoes with parsley, garlic, salt, and spices.

In prepared dish, alternately layer potatoes and 1 cup cheese, beginning and ending with potatoes. Add broth. Cover with foil; bake 30 minutes. Remove foil; bake 30 minutes longer. Sprinkle with remaining cheese; bake until potatoes are tender, about 15 minutes. Sprinkle with additional parsley.
