SUPER MASHED POTATOES
Category: Mashed Potatoes
2 tbsp olive oil
2 large sweet (Spanish) onions, halved lengthwise and thinly sliced
1 bunch scallions, trimmed and sliced
2 tsp salt
3/4 tsp freshly ground black pepper
4 lb baking potatoes or Yukon Gold, cut in 1-1/2 inch chunks
8 large cloves garlic, peeled
2/3 cup sour cream
1 1/3 cups milk, heated until hot
Heat oil in a large skillet over medium heat. Add onions and cook, stirring often, 20 minutes or until golden brown. Stir in scallions, 1/2 tsp salt and 1/4 tsp pepper; cook a few minutes to soften scallions.
Meanwhile gently simmer potatoes, garlic and 1 tsp salt in a large pot in water to cover 20 minutes or until tender. Drain; return to pot. Mash, then stir in sour cream, milk, remaining 1/2 tsp each salt and pepper and most of the onion mixture. Spoon into a serving dish; top with rest of onion mixture. Serves 12
