ROSY RHUBARB SQUARES

Crust: Mix together to fine crumbs. Reserving 1/2 cup for topping
1 1/4 cups flour
1/3 cup confectioners sugar
1/2 cup unsalted butter, cut into 6 pieces

Press crumbs into baking pan and bake 12 minutes. Remove from oven.

Filling
2 eggs
1 cup sugar
2 tbsp flour
1/4 tsp baking powder
1/8 salt and ground nutmeg
2 cups diced rhubarb

Filling: Beat eggs with sugar until thick and smooth. Blend in dry ingredients. Stir in rhubarb. Spoon over crust. Top with reserved crumbs and bake for 35-40 minutes. Cool completely before cutting into squares.
