RED, WHITE AND BLUEBERRY TRIFLE

2 lbs strawberries, stemmed and sliced
2-3 cups fresh blueberries
4 tbsp sweet cream sherry wine
2 cups confectioners sugar
1 (5.1 oz) box instant vanilla pudding
1 tbsp vanilla extract
1 pint heavy whipping cream, chilled
3 tbsp confectioners sugar
1 angel food cake, cut into cubes
Whole berries for garnish
In a large bowl, toss together first 4 ingredients. Stir well, then let sit until it gets saucy.
Prepared pudding as directed, adding the vanilla extract and refrigerate to set. Whip up the cream with the confectioners sugar until light and fluffy.
To assemble: Place the cake cubes on bottom of a large glass bowl. Spoon some berries over cake, make sure to let some of the juice soak into the cake. Top with a layer of pudding, then whipped cream. Repeat layering and finishing off with whipped cream. Garnish with berry.
