SHRIMP AU GRATIN

1 lb cooked medium or large shrimp, deveined
6 tbsp butter
5 tbsp flour
1/2 tsp salt
White pepper, to taste
1 (12 oz) can evaporated milk
1/2 cup water
1/2 cup shredded Swiss and parmesan cheeses
2 tbsp brandy, optional
Preheat oven to 400. In a saucepan, melt butter and remove pan from heat. Stir in flour and salt to make a smooth paste. Gradually add milk and water; stirring constantly. Add cheeses. Return to medium-low heat. Stirring constantly; cook until cheeses melt and sauce starts to thicken. Gently stir in shrimp and brandy. Pour into a buttered 2 quart baking dish. Bake for 20 minutes or until lightly browned on top.
