BUTTERY ASPARAGUS SAUTE

Category: Asparagus

1 lb asparagus, trimmed and cut into 1 inch pieces
1 medium red bell pepper, cut into short, thin strips
1/3 cup sliced shallots, about 2 large or chopped onion
3 tbsp butter
1/4 tsp salt
Pepper and nutmeg, to taste

In a large skillet, cook vegetables in butter until asparagus is crisp-tender, about 5 minutes, stirring occasionally. Season with salt, pepper and nutmeg. Serve immediately. Serves 6
