SCALLOPED MEAT BALLS CASSEROLE

2 cup raw potatoes, sliced
1 cup carrots, sliced
1 medium onion, sliced
2 tsp salt
1 lb ground beef
1/4 cup dry bread crumbs
1 egg
1/3 cup milk
1/4 tsp thyme
2 tbsp butter
1 can cream of mushroom soup
1/2 tsp paprika
1 cup sour cream

Parboil potatoes, carrots, and onion in tsp of salt. Drain. Mix ground beef, egg, bread crumbs, milk, thyme, and remaining salt. Shape into balls. Brown in butter in frying pan. Remove and drain. Pour all drippings from pan.

Stir soup, sour cream, and paprika into frying pan. Heat, stirring constantly until hot. Pour half of vegetables, then meat balls and soup mixture into a baking dish. Top with remaining vegetables. Cover and bake at 375 for 30 minutes.
