CRUSTED PORK CHOPS

4 (1 inch thick) bone-in pork chops, seasoned with salt and pepper
3 tbsp olive oil, divided
2 tbsp Dijon mustard
1 cup soft bread crumbs
1/4 cup minced parsley
2 clove garlic, minced
1/4 cup minced onion
1/2 (8 oz) pkg sliced fresh mushrooms
1 1/2 tbsp flour
1/2 cup dry white wine
1 tsp tomato paste
1 (14 1/2 oz) can beef broth.
Preheat oven to 400. Brown chops in 1 tbsp hot oil on each side, about 2-3 minutes. Remove skillet from heat. Brush tops of chops with Dijon mustard.
Combine bread crumbs and next seasonings and remaining 2 tbsp olive oil in a bowl. Press crumb mixture evenly over tops and sides of chops. Bake for 10-12 minutes or until tender.
Remove skillet from oven; remove chops, and keep warm. Saute onion and mushrooms in skillet over high heat for 7-8 minutes. Reduce heat to medium low, add flour, and cook, whisking constantly, 1 minute.
Whisk together wine and tomato paste. Add to skillet, whisking constantly. Whisk in broth, and cook, whisking constantly, 5 minutes or until mixture is thickened. Serve sauce over chops. Serves 4
