1 3/4 cup confectioners sugar
1 1/2 cups butter, softened
1 cup peanut butter, creamy or chunky
1 tsp vanilla extract
3 cups graham cracker crumbs
1 cup chopped peanuts
2 cups semi-sweet chocolate chips
1/4 cup peanut butter
Lin a 9 inch square pan with foil, leaving about 1 inch hanging over sides to easily lift bars out of pan.
In a large bowl, mix the confectioners sugar, butter, peanut butter and vanilla extract. Stir in cracker crumbs and peanuts. (This will be very stiff.) Press mixture into the pan.
Over low heat, stir together chocolate chips and peanut butter until smooth. Spread over mixture in the pan. Cover and refrigerate about 1 hour or until chocolate is set. Remove from the pan and cut into squares. Refrigerate, uncovered, about 2 hours or until firm. Cover and refrigerate leftovers.
