Prepare favorite mashed potatoes using about 3 lbs baking potatoes. While potatoes are boiling, cook 6 chopped leeks in 4 tbsp butter until soft, about 8-10 minutes. Stir leeks and a pinch of thyme into mashed potatoes when adding the milk.
