MASHED ONION ROASTED POTATOES

1 envelope soup mix
4 medium potatoes, cut into chunks
1/3 cup olive or vegetable oil
1 3/4 cup hot milk

Preheat oven to 45-. In a plastic bag, add all ingredients except milk and shake until potatoes are evenly coated. Place in a 13x9 inch baking pan, discard bag. Bake, uncovered, stirring occasionally, 40 minutes or until potatoes are tender and golden brown. Turn potatoes into a large bowl. Mash potatoes and stir in hot milk until creamy. Serves 4
