CHEESE AND HERB POTATOES

Category: Hash Brown Potatoes/Casseroles

2 lbs frozen hash brown potatoes, thawed
1/2 fresh onion, chopped
2 tsp fresh rosemary, tarragon, or basil or a combination of any
1 tbsp fresh dill
1 tsp salt
1/2 tsp pepper
1/3 green pepper, chopped
4 cups shredded sharp cheddar cheese
1 1/2 cups milk
2 tbsp butter, melted

Grease a casserole dish. In a large bowl, combine first 7 ingredients. Layer half the potatoes into the casserole dish. Cover with half the cheese. Repeat layering. Combine milk and butter and pour over casserole. Bake at 350 for 45 minutes. Serves 12
