SOUTHWESTERN SIMMERED BEEF

3 lb bottom round of beef, trimmed and cut into 2 inch pieces
2 tbsp oil
1 large onion, chopped
2 cloves garlic, minced
1/3 cup flour
1 (14 1/2 oz) can Mexican-style stewed tomatoes
1 (7 oz) can diced green chilies
1/4 cup water
1 tsp oregano and cumin

Brown meat in oil. Add onion and garlic; cook until soft. Sprinkle with flour; cook 2 minutes. Add remaining ingredients. Cover and simmer for 1 to 1 1/2 hours or until meat is tender. Stir occasionally and add additional water, if needed. To serve, garnish with a dollop of sour cream, if desired. Serves 6-8
