SOUTHWEST AU GRATIN POTATOES

2 lbs Yukon potatoes, sliced
1 lb baked potatoes, sliced
2 tbsp salad oil
1/4 cup red onions, small julienne
1 half-moon jalapeno, seeded
1/2 tsp favorite steak seasoning
1 cup chicken stock
1 cup heavy cream
1 1/2 cups smoked cheddar cheese, grated
1 1/2 cups pepper jack cheese, grated

Slice potatoes 1/8 inch thick. Place oil in saute pan. Add onion and jalapeno. Cook until vegetables are soft. Add potatoes. Slightly brown potatoes. Add remaining ingredients. Stir until evenly coated. Serve piping hot.

Note: Potatoes should be creamy and moist.
