FRIED CHICKEN LIVERS

1 lb chicken livers
1 cup flour
1/2 tsp salt and pepper
1 tbsp dried parsley
1/4 cup vegetable oil
3 tbsp butter
1 onion, chopped
1/2 cup white wine

Wash and drain chicken livers. Combine next 4 ingredients in a bag. Drop livers in bag, 4-5 at a time, then shake. Heat oil and butter in a skillet. Put in onions and livers. Fry at medium-high heat until browned, about 5 minutes. Pour in wine; simmer for 1-2 minutes. Serve with hot cooked rice. Serves 4
