ASIAN BEEF AND NOODLES - Easy

1 1/4 lbs ground beef
2 cups water
1 (16 oz) pkg favorite frozen mixed vegetables
2 (3 oz) pkg Ramen noodles, beef or oriental flavor, broken up
1 tsp ground ginger
2 tbsp chopped scallions

In a skillet, brown and drain ground beef. Remove to a bowl. In same skillet, combine the remaining ingredients including seasoning packet from noodles, and bring to a boil, then reduce heat to low and simmer for 3 minutes, or until the noodles are tender, stirring occasionally. Return the beef to the skillet and add the scallions. Cook until heated through, stirring to blend. Serves 4
