PARMESAN MASHED POTATO CASSEROLE

12 small red potatoes, unpeeled and sliced
4 cloves garlic, unpeeled
1/2 cup plus 2 tbsp grated parmesan cheese
4 tbsp butter
2 tbsp milk or cream
1/2 tsp salt
1/4 tsp pepper, preferably white
2 tbsp chopped parsley

Boil potatoes and garlic in a saucepan until tender. Meanwhile, preheat broiler. Butter and shallow 1-quart baking dish. Drain potatoes and garlic. When the garlic is cool enough to handle, slip out of skins.

In a shallow bowl, coarsely mash potatoes and garlic. Add 1/2 cup cheese, and next 4 ingredients. Spread potato mixture in a baking dish and evenly sprinkle with remaining 2 tbsp cheese on top. Broil 4 inches from heat until top is lightly browned, about 5 minutes. Garnish with chopped parsley.
