KENTUCK FRIED CHICKEN

3 lb chicken, cut up
1 egg, beaten with a bit of milk added

Dry Coating Mix
2 pkg Italian dressing mix
1 envelope Lipton’s tomato cup of soup powder
1 tsp seasoning Salt and pepper, to taste
2 tsp poultry seasoning
2 cups flour

Hot oil

Dip chicken in egg mixture and then into dry coating mix. Let pieces dry for a few minutes and brown in hot oil on both sides. Transfer to a baking pan. Seal in foil. Brown in the oven, uncovered, or until thickest pieces are tender and well done.

Variation: Honey BBQ Chicken: After chicken is done, drizzle pieces in pan with hone and return to oven for a few minutes to let honey begin to boil.
