PENNE IN VODKA SAUCE

1/2 lb dried penne, cooked al dente
2 tbsp olive oil
1 tbsp onion, finely chopped
3 pieces sun-dried tomato, reconstituted (see note)
2 oz vodka
1 cup marinara sauce
1/4 cup plus 4 tbsp heavy cream
2 tbsp grated parmesan cheese
Pepper, to taste

While pasta is cooking, heat oil in a skillet and sauté onion and cool until translucent, about 1 – 1 1/2 minutes. Add tomato; cook for 30 seconds more. Remove from heat. Add vodka and return to heat (CAUTION: Vodka will flame), cook 1 1/2 - 2 minutes to burn off alcohol. Add remaining ingredients. Let reduce for 2 minutes.

Ladle a little sauce into a second skillet. Add cooked pasta and toss to coat. Place in a serving bowl; top with remaining sauce. NOTE: To reconstitute sun-dried tomatoes, place them in a small bowl; top with boiling water and let sit for 15-20 minutes. Thin slices of chicken may be added to the recipe before sun-dried tomato to add a little extra something.
