(This needs some advanced preparation, but is worth it!)
2 nights before serving prepare
Cheese sticks
1 (8 oz) can mushrooms
4 tbsp butter
4 tbsp flour
1 cup light cream
1/4 tsp salt
Dash cayenne pepper
1 1/2 cups shredded sharp cheddar cheese
Night before prepare chicken breasts:
6-8 boneless, skinless chicken breasts
Salt and pepper, to taste
Flour
1 egg, beaten
Cracker meal
Cheese sticks: Saute mushrooms in butter for 5 minutes. Blend in flour and cream. Stir constantly until very thick. Add salt and cayenne pepper. Stir in cheese over low heat until melted. Pour into pie plate. Chill overnight and then cut into 6-8 pieces.
Chicken: Make into cutlets by pounding each bbreast in between plastic wrap. Sprinkle with salt and pepper. Place chicken stick in center of breast, tucking in sides, roll chicken as jelly-roll. Seal with a toothpick if necessary.
Dust chicken roll with flour. Dip in beat egg, roll in crackers. Chill overnight.
When ready for meal, fry rolls in deep fat until golden brown. Place in a shallow baking diah. Bake at 225 for 45 minutes.
