GREEK GARLIC CHICKEN QUARTERS

8 chicken quarters, about 5 lbs total
3 heads minced garlic
1/2 cup lemon juice
1/4 cup olive oil
2 1/2 tbsp dried oregano
2 tbsp coarse ground pepper
2 tsp salt
1/4 cup chopped parsley
Rinse and pat dry chicken, discarding any lumps of fat.
In a bowl, combine garlic and next 5 ingredients. Spread mixture evenly over chicken. Put chicken in a baking dish in a single layer in baking dish. Bake at 375 until skin is browned, about 1 1/2 hours.
After 45 minutes of baking, baste is chicken juices every 10-15 minutes. Transfer chicken to a serving platter.
Skim and discard fat from drippings. Add 1/2 cup boiling water to pan; stir to loosen browned bits; and pour sauce into a bowl. Serve sauce with chicken.
