GREEK CHICKEN

1 large whole fryer
1 large lemon
1/4 to 1/2 cup butter, melted
Greek seasoning
Wash and dry chicken; place in a roasting pan. Cut lemon into fourths and squeeze juice over chicken, covering well with juice. Take rinds and stuff inside cavity. Pour melted butter on chicken, coating well. Sprinkle with seasoning evenly all over chicken, even underneath. DO NOT COVER. Remove middle rack and place chicken on bottom rack and bake at 250, uncovered, for 4 hours. Basting occasionally.
