TWICE BAKED POTATOES (Lipton)

1 tbsp butter
1 envelope Lipton Recipe Secrets Fiesta Herb and Red Pepper Soup Mix
3/4 cup milk
4 medium baking potatoes, unpeeled and baked
2 large green onions, chopped
1 cup shredded Monterey jack cheese

Preheat oven to 375. In a small saucepan over low heat, melt butter, soup mix and milk, stirring occasionally until butter melts; set aside. Cut a lengthwise slice from top of each potato and remove pulp in a medium bowl, leaving 1/4 inch thick shells; add to bowl.

Add soup mixture; mash. Stir in onions and 3/4 cup cheese. Spoon into shells. On baking sheet arrange potatoes; sprinkle with remaining cheese. Bake, uncovered, until heated through and cheese is melted.
