SHRIMP BOIL

Boil mix
1/2 lemon
1/3 cup water
1 small onion, chopped
3 tbsp lemon juice
1 tbsp cooking oil
2 clove garlic, minced
1 tbsp Cajun seasoning
1/4 tsp salt

1 1/2 - 2 lbs shrimp, peeled
1/2 cup chopped green or red bell pepper
Garnish, lettuce leaves

Carefully remove peel from lemon half, being carefully not to include the white portion. Cut peel into very thin strips. Combine peel with remaining boiling ingredients in a large skillet. Add shrimp, stirring to coat. Return to boiling. Reduce heat and simmer, covered, about 4 minute or until shrimp are opaque, stirring twice. Stir in bell pepper. Transfer to a glass bowl. Cover and marinate in refrigerator for 4 hours, stirring occasionally. At serving time, drain mixture well. Serve in a lettuce-lined bowl with serving picks. Serves 12
