GLAZED SWEET POTATOES

4 tbsp butter
1/2 to 1/3 cup brown sugar
3 tbsp maple syrup
1 tbsp orange juice concentrate, optional
2 big pinches fresh grated nutmeg
4 medium sweet potatoes, peeled, halved, each half cut into 4 lengthwise wedges

Preheat oven to 375. Spray a 13x9 inch baking dish with non-stick cooking spray. Place all ingredients in baking dish; cover with foil and bake for 30-40 minutes, or till yams are tender when pierced with a fork but still hold their shape. Do not over bake or you'll have mushy potatoes. Serves 6-8
