*SPINACH WEDGES*

Category: Quiche and Savory Tarts / Tartlettes

4 frozen puff pastry shells, thawed for 2 hours
6 eggs
3 oz cream cheese, softened
1/4 cup shredded sharp cheddar cheese
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
2 tbsp chopped green onion
1 tbsp parsley
1/2 tsp salt
Pepper
Grated parmesan cheese

Roll 4 pastry shells together to make a 10 inch pie crust. Allow pastry to rest 5 minutes before putting into pie pan. Flute edges. Combine eggs, cream cheese and cheddar cheese. Fold in next 5 ingredients and place in pie crust; top with parmesan cheese.

Bake at 425 for 15 minutes, or until edges are set. Allow to stand for 10 minutes before cutting into small wedges and serving.
