*SHRIMP BOATS*

Dressing
1 envelope dry Italian dressing mix
1/4 cup vinegar, water, vegetable oil, olive oil and grated parmesan cheese
1 lb cooked, shelled and deveined shrimp
Fresh spinach leaves
3 eggs, hard boiled and sliced
Pour dressing mix in a jar. Add dressing ingredients and shake. Chill. Shake again and pour over cooked shrimp. Allow shrimp to marinate in the dressing for 24 hours.
Using half the shrimp, wrap each in a spinach leaf. Place a slice of boiled egg and another shrimp on top of wrapped shrimp. Put a fancy toothpick through center to secure. Serve. Garnish serving platter with purple kale.
