HERBED CHICKEN AND POTATOES
Category: Chicken
1/2 cup flour
1 tsp oregano and basil
1/2 tsp thyme
1/4 tsp salt
1/8 tsp pepper
3 tbsp olive oil
2 1/2 lbs chicken, cut up
3 medium potatoes, cut into medium wedges
1/2 cup white wine
Mix together first 6 ingredients. Heat oil in a skillet. Dredge chicken in flour. Add to hot oil and brown on both sides. Remove chicken from pan and set aside. Add potato wedges and brown on both sides. Top the potatoes with the chicken and pour the wine over all. Bake at 375, uncovered, 25-30 minutes, or until chicken is tender. Serves 4
