SCALLION HONEY MARINADE FOR ROASTED CHICKEN

1/4 cup scallion stalks, cut in 1/2 inch lengths
2 clove garlic, minced
2-3 slices fresh ginger root, minced
1 cup soy sauce
2 tbsp sherry
1 tbsp honey
1 tsp Salt and pepper, to taste

Combine ingredients, blending well. Rub mixture over chicken inside and out. Let stand 1 hour, turning bird occasionally. Drain, reserving marinade for basting. Roast chicken as desired.
