DOUBLE APPLE TURNOVERS

1/2 cup Cider Apple Butter
1/2 cup apple cider or juice
1/2 tsp cinnamon
1 orange peel, grated*
1/4 cup golden raisins
4 large, firm apples, peeled, cored and chopped
1 pkg frozen phyllo dough
No-Stick Cooking Spray
Sugar
In large saucepan, combine apple butter, cider, cinnamon and grated orange peel; simmer for 5 minutes. Add raisins and simmer for 2 minutes more. Add apples and cook over medium heat for about 10 minutes or until apples begin to soften and most of liquid evaporates. Cool in refrigerator.
Unwrap phyllo dough but keep covered with damp cloth. Remove 1 sheet of dough; spray with nonstick cooking spray. Top with second sheet of dough; spray with cooking spray.
Spoon about 1/3 cup of apple filling on lower right corner of the dough. Fold dough over filling to form a large rectangle. Then fold turnover as if it were a flag, making a triangular packet with each turn.
Repeat this process until all turnovers are made. Place finished turnovers on baking sheet; sprinkle with sugar. Bake at 375 for about 25 minutes or until golden brown. Note: Grate orange part of peel only, not bitter white part. Serves 6
