CRISPY POTATO WEDGES

4 medium potatoes
1/4 cup cornflake crumbs
2 tbsp grated Parmesan cheese
1 tsp dried parsley flakes
1/2 tsp salt
1/8 tsp pepper
1/4 cup butter, melted

Preheat oven to 400. Cut cleaned potatoes in 8 lengthwise pieces.

In a pie plate, combine cornflake crumbs, Parmesan cheese, parsley, salt, and
pepper. Dip potatoes in melted butter, then coat with crumb mixture. Place potato wedges on baking sheet. Bake 15-20 minutes, or until tender. Serves 4
