SPICED PECANS WITH RUM GLAZE

2 cups pecan halves

Spice Mix:
2 tbsp sugar
3/4 tsp kosher sale
1/2 tsp ground cinnamon
1/8 tsp EACH ground cloves and allspice

Rum Glaze:
1 tbsp dark rum
2 tsp vanilla extract
1 tsp brown sugar
1 tbsp unsalted butter

Preheat oven to 350. Line a rimmed baking sheet with parchment paper and spread pecans on it in an even layer. Toast for 4 minutes, rotate pan, and continue to toast until fragrant and the color deepens slightly, about 4 minutes.

Combine ingredients for spice mix; set aside. Bring ingredients for glaze to a boil, whisking constantly.

Stir in toasted pecans and cook, stirring constantly with a wooden spoon, until nuts are shiny and almost all liquid has evaporated, about 1 1/2 minutes. Transfer pecans to bowl with spice mix; toss well to coat. Return pecans to lined baking sheet to cool. Note: The nuts can be stored in airtight container up to 5 days.
