1/4 lb prosciutto, chopped
2 cups cream
1 (28 oz) can crushed tomatoes
1 shot vodka, to taste
1 (7 oz) jar roasted peppers
2 tbsp chopped fresh parsley
2 tsp garlic powder
1 1/4 tsp sugar, or to taste
1 tsp salt
1/4 tsp pepper
1/8 tsp crushed red pepper
1 cup parmesan cheese
1 lb pkg rigatoni, cooked al dente
1 cup pkg frozen peas, thawed

Drain roasted pepper, reserving a small amount of liquid. Cut peppers into strips. Combine prosciutto, cream, crushed tomatoes, vodka, roasted peppers with reserved liquid and seasonings in a saucepan. Cover and cook over medium heat, stirring often, until sauce comes to a boil. Reduce heat, simmer for 30 minutes. Transfer cooked pasta to a serving bowl. Stir cheese into sauce and stir into rigatoni. Top with peas. Serves 4-6
