CONFETTI TWICE BAKED POTATO

Category: Twice Baked Potatoes

4 medium baking potatoes
1/2 cup low fat cottage cheese
2 tsp butter
1/4 cup milk
1/2 cup chopped green onions and grated potatoes
1/4 tsp salt and pepper
Grated parmesan cheese

Bake potatoes; set aside and cool. Cut top third of each potato. Carefully scoop out insides leaving 1/4 inch of potato to form a shell.

Mash potato filling with remaining ingredients except parmesan cheese. Mound mixture into shell and top with cheese. Bake 30 minutes.

VARIATION: Instead of baking, serve as mashed potatoes and transfer into a buttered casserole dish and top with parmesan cheese and bake until cheese is browned.
