APPLE CIDER AND CHIVE VINAIGRETTE

1 Granny Smith apple, grated
2 tbsp water
2 tbsp apple cider
2 tbsp apple cider vinegar
1 tsp sugar
1 tsp Dijon mustard
1 tbsp fresh chives, chopped
6 tbsp oil
Salt and pepper to taste
Combine the grated apple, water, apple cider, vinegar and sugar in a small saucepan and simmer over low heat until reduced to about 1/4 cup. Whisk in the mustard, chives and the oil and season to taste with salt and pepper.
Notes: We served this dressing over field greens tossed with toasted walnuts, grape tomatoes, little bit of crumbled goat cheese and cider-plumped dried cranberries.
