FETTUCCINE WITH SALMON SAUCE

2 tbsp butter
10 oz salmon, cut into thin strips
1 leek, sliced
1 red onion, thinly sliced
1 clove garlic, minced
3/4 cup light cream and sour cream
1/2 tbsp cornstarch
2 tbsp lemon zest
1/2 tsp pepper and paprika
8 oz fettuccine noodles, cooked al dente
1/4 cup grated parmesan cheese

While pasta is cooking, melt butter in a skillet over medium heat. Add next 4 ingredients, and fry until fragrant, about 2 minutes.

In a bowl, mix together next 3 ingredients; stir into skillet. Stir in zest and seasonings. Cook, stirring constant, for 10 minutes, until sauce is thickened and salmon flakes easily with a fork.

Toss drained pasta with salmon sauce and top with parmesan cheese to serve.
