GERMAN POTATO-CHEESE SOUP

4 cups water
20 oz chicken broth
4 tbsp chicken soup base
1/2 tsp ground pepper
3 large carrots, peeled and chopped small, about 2 1/2 cups
4 medium potatoes, peeled and diced
1 large onion, chopped
2 stalks celery, chopped
1 medium red bell pepper, finely diced
1 cup mayonnaise
1/2 cup processed cheese
1/2 lb sharp cheddar cheese, grated
1/4 lb Swiss cheese, grated
4 tbsp instant potato flakes

In a large pot, add first 7 ingredients and bring to a boil. Reduce heat and simmer 15 minutes or until vegetables are ender, stirring occasionally. Add celery and bell pepper; simmer for 5 minutes longer.

Gradually add mayonnaise, whisking until smooth. Reduce heat and add cheeses. Simmer for 5 minutes or until cheese melts and soup is creamy; stirring occasionally. Add instant potatoes and stir well. Adjust for seasonings. Let soup sit 5 minutes before serving. Serves 12
