SAUSAGE AND HOT POTATO SALAD

Dressing
3 tbsp oil
1 tbsp white vinegar
1 tsp Dijon mustard
1/2 tsp salt, sugar and dried basil leaves, crushed
1/4 tsp tarragon leaves, crushed
Dash pepper

Salad
1 cup water
4 medium potatoes, peeled, halved and sliced
1 small onion, sliced
1/2 tsp salt
1 lb bratwurst, smoked sausage or Polish sausage

Combine dressing ingredients and set aside.

Salad: Pour water in a skillet. Layer potatoes and onions. Sprinkle with salt. Cut sausage into serving pieces and score diagonally and place on potatoes. Cover and cook until potatoes are cooked through and tender.

Set sausage aside and spoon potatoes and onions in a bowl. Pour dressing over mixture and toss gently. Place salad on platter and top with sausage.
