RUM MARINATED PORK CHOPS

1 cup apple juice
3/4 cup soy sauce
1/2 cup honey
3 clove garlic, minced
2 tbsp ginger root, minced
1 tbsp dried mustard
1 tsp Worcestershire sauce
1/2 cup dark rum
4 (8 oz) pork loin chops, 1 inch thick
1 1/8 cup apple jelly
3 tbsp lemon juice
1/8 tsp nutmeg

In a bowl, combine apple juice, 1/2 cup soy sauce and next 6 ingredients in a resealable bag. Add chops and marinade overnight. Drain the marinade into a sauce pan and add the jelly and remaining 1/4 cup soy sauce. Bring to a boil and boil just until it has reduced to about 1 1/2 cups; stir in lemon juice and nutmeg.

Grill chops on oiled rack about 6 inches over hot coals, turning and basting with sauce every 5 minutes, for a total of 20 minutes or until they are just cooked through. Serve chops with sauce.
