FILET MIGNON, RED WINE REDUCTION

4 (8 oz) filet steaks
3 tbsp Olive oil
4 shallots, sliced
Salt and pepper to taste
3/4 cup red wine
1/3 cup Peter Luger steak sauce

Season steaks w salt and pepper. Heat saute pan with 2 tbsp oil. When pan is hot place filets in pan and sear on each side for 4 to 5 minutes. Remove from pan and set aside.

Add 1 tbsp olive oil and saute shallots until golden brown. Add red wine and reduce by half. Add steak sauce and bring to a boil and reduce to a simmer for 2 minutes. Place filets back in the sauce for 5- 7 minutes to finish cooking until medium-rare, turning once to ensure even cooking. Place filet on platter and sauce underneath.

Serve with homemade potato latkas (Under potato category).
