FROZEN COOKIE AND MINT CUPS

12 cupcake cups
21 chocolate sandwich cookies
3 tbsp butter, melted
1 (7 oz) jar marshmallow creme
1/2 tsp peppermint extract
1 tsp milk
2-3 drops green food coloring
1 (12 oz) carton frozen whipped topping, thawed

Crush 15 cookies, reserving remaining cookies for topping. Combine crumbs with butter and press 1 rounded tbsp crumb mixture into bottom of each cupcake cup.

Combine next 4 ingredients and gently fold in whipped topping. Spoon about 1/4 cup mixture into each cup. Cut reserved cookies in half and place cut-side down into creamed mixture and freeze until serving time.
